I was super worried this week would be a disaster but then low and behold a simple stomach bug pushed me over a threshold. I've had tummy issues since Saturday. It's finally getting a little better!
And you read it right. I FINALLY weigh less than Johnathan. I should weigh less than him. I'm shorter and female. It does feel pretty good to weigh less than him and I've worked really hard. Pretty soon I'll let him pick me and throw me around. Don't be surprised if you see it happening because once I'm a little comfortable I'm gonna let him finally carry me over our threshold. He's also been working hard to get where he's at so it's kind of been a race, and for once, I feel like I'm winning. I am super proud of Johnathan. He's worked soooo hard and given up sooo much as well. He's my rock through all of this and I'm so blessed that God chose to bless me with him as a husband. I could not have done a single step of this without him right beside me. I love him so much and owe so much to him because of this.
Last week, was pretty uneventful believe it not. I know it seems like we are always on the go and we are. It's good for us to just chill for a while. We watched our shows. Right now, it's Face off, Top Chef and Project Runway. And cooked some pretty banging dinners. I'm getting quite good at this re-inventing the meal wheel thing. It's not easy. Everyone keeps asking me how I do it. Willpower. The Internet. And you guys. You help hold me accountable with this blog. It's all about finding alternatives. Like sweets? There are TONS of grain free/sugar free recipes on Pinterest and Google. Like Italian? Sub zucchini for pasta. You won't be able to tell the difference. There are soooo many ways to make it work. You just have to try it. You might like it and become healthier. Don't believe me?? Ask my Papa. His sugar levels in the morning have gone from 150+ to around 80. That's pretty amazing. It's not that hard to be healthy and eat wonderful meals!
On Friday, we did have a lock in at the church. I really love being called to serve the Lord. It really is such a blast being a part of those kids' lives. It's a blessing. They are tons of fun. You never know what they are going to say or do sometimes, but that is part of the fun. God works through us through those kids. We watched Rio 2, Robinhood, played some games on the Wii, had some devotional time, played with Crimson, and had some good food. Did I say food? Yes, I did. Johnathan grilled out burgers and hot dogs. I can have burgers and dogs, just sans bread. It's pretty amazing! I also made the kiddos a s'mores cake that they LOVED. And since we, Papa and Mrs. Becky are also doing the low carb thing, I made some sugar free chocolate pudding with Almond/Coconut blend milk. It was super yummy. I guess the best part for the kids is actually sleeping at church. It's just amazing to them even if we have three rooms dedicated as sleeping rooms. The next morning, is some of my favorite parts. Waking those sleeping babies up. It's my brother's too. Did you know we have a bull horn?? And that my brother LOVES using it in the mornings. He used it to wake them up by not only talking through it but sounding the siren. At least they got a home cooked meal of sausage, bacon, eggs and waffles. Yes, I said waffles. I made special waffles for us. It's also the recipe for the week below!We had those waffles with some sugar free syrup. It was sooooo good. All in all, we had a great time. God sure is great, isn't he?
Yesterday, I started grad school. I honestly had given up hope on the fact that I would get a Master's degree. But I've worked hard and I'm proud of myself. I love to learn and I look forward to what the future has in store for me. I did have to bring a little cheese to class. I could feel the hunger pains. I bought some protein chips from the WeightWise store so I don't look like such a freak bringing block cheese to class. But block cheese is the best..... Anyways, I already like my Monday night class. I know I'm going to do well. I just gotta keep up the willpower and hard work. I CAN DO THIS! Master's degree, here I come!!
And finally tonight, we celebrated Beth's birthday and back to school. We do this every year at Pizza Inn. This year I was dreading it. I love their Buffalo Chicken Pizza. It's the best. This year I knew I had to do things differently. No pizza right. So, I made myself a big salad and then ate the toppings off of three pieces of pizza. At least I got to eat a little pizza, kind of... But that's not what tonight is about. This is a another lesson that I've learned. It's not about the family meal. It's about the family. It's about coming together and celebrating 3rd grade, Kindergarden, Nursing School and Grad School. It's about celebrating that 8 years ago, Bethany was born. It's about quailty time with some of my favorite people, my husband, my brother, my niece, Nana, Papa, Aunt Nae, Uncle Stephen, Maryah, Megan and Beth. We were only missing a few..namely Aunt Ti and Joseph. It's not about the food or the lack of what I can eat. It's about those small moments make memories. It was a great night.
So prayer requests for this week include prayers for my church. If you don't have a home church, we would love to have you. We need members who are willing to help serve and bring others to Christ. Our churches are dying folks. We needs lots of prayer and Jesus to help get us through. I need prayer for my strength through grad school. And just prayers in general.

Recipe for the Week:
Low Carb Waffles:
Ingredients:
1/2 C. Smashed Ripe Banana
2 Eggs
Vanilla, as desired for flavoring
Instructions:
1. Mix Banana, egg, and vanilla in a medium bowl.
2. Scoop mix into heated and sprayed with non stick spray waffle maker
3. Cook until edges are dry.
4. Top with a little butter and sugar free syrup
